Pork and cheese quesadillas with guacamole

Guacamole
- 2 large (640g) avocados, chopped
- 1 small (90g) tomato, seeded, chopped finely
- 1/2 small (50g) red onion, chopped finely
- 1 long red chilli, seeded, chopped finely
- 1/4 cup finely chopped fresh coriander leaves
- 2 tablespoon lime juice
- salt
Pork and cheese quesadillas
- 1 tablespoon olive oil
- 500 gram pork mince
- 1 medium (200g) green capsicum, chopped finely
- 1 long red chilli, chopped finely
- 1 clove garlic, crushed
- 1/2 cup coarsely chopped fresh coriander leaves
- 10 burrito tortillas
- 2 tablespoon olive oil, extra
- 2 cup (250g) grated vintage cheddar cheese
Method
Pork and cheese quesadillas with guacamole
- 1Heat the oil in a large frying pan; cook the mince, stirring, about 10 minutes or until browned. Add the capsicum, chilli and garlic; cook, stirring, until fragrant. Remove from heat, stir in coriander.
- 2Meanwhile, to make guacamole, place the avocados in a medium bowl, mash roughly with a fork. Stir in the tomato, onion, chilli, coriander and juice. Season to taste with salt.
- 3Brush one side of the tortillas with extra oil, Spread the pork mixture evenly over half the tortillas, oiled side down; sprinkle with the cheese. Top with the remaining tortillas, oiled side up.
- 4Cook in batches in a heated sandwich press until cheese is melted. Or, add to a heated non-stick frying pan and cook until browned lightly on both sides.
- 5Cut quesadillas into quarters; serve with guacamole.

Quesadillas are tortillas stuffed with cheese and other ingredients. They can be fried, baked, sauted or grilled until cheese melts.
