Oysters with lime dressing
Dress up these fresh oysters with a citrus zing and, for a real Thai flavour, an added chilli burst sure to have guests reaching for more.

Oysters with lime dressing
- 36 oysters, on the half shell
- 1/3 cup (80ml) lime juice
- 3 teaspoon white sugar
- 1 kaffir lime leaf, shredded finely
- 1 fresh long red thai chilli, deseeded, cut into small fine strips, optional
- 2 1/2 tablespoon peanut oil
Method
Oysters with lime dressing
- 1Carefully remove oysters from their shells; wash and dry the shells if necessary. Return the oysters to the shells; place in a single layer on a serving platter or individual serving plates.
- 2Place remaining ingredients in a screw-top jar; shake well. Season with salt. Drizzle dressing over oysters; serve immediately.
Notes
Not suitable to freeze or microwave When serving oysters in the shell, they are best pushed into a bed of rock salt so they they don't tip over, losing their dressing.
