Orange butterscotch sauce

Ingredients

Orange butterscotch sauce
  • 1/2 cup (125ml) thickened cream
  • 1/2 cup (110g) firmly packed brown sugar
  • 60 gram cold butter, chopped
  • 1 teaspoon orange rind, finely grated

Method

Orange butterscotch sauce

    Stir ingredients in small saucepan over low heat, without boiling, until sugar dissolves. Bring to the boil then reduce heat, simmer, uncovered, 3 minutes.

Notes

For a lavish touch, add ¼ cup raisins and 1 tablespoon rum or brandy. Serve over ice- cream or baked apples.
