Lemon and mixed berry self-saucing pudding

The contrast between the light, lemony pudding and rich berry topping of these self-saucing puddings is delectable.

Lemon and mixed berry self-saucing pudding
  • 3/4 cup (110g) self-raising flour
  • 1/2 cup (110g) caster sugar
  • 1/2 cup (125ml) skim milk
  • 1 tablespoon finely grated lemon rind
  • 30 gram unsalted butter, melted
  • 1/3 cup (55g) icing sugar
  • 2/3 cup (160ml) boiling water
  • 1 cup (150g) frozen mixed berries
  • 1 tablespoon caster sugar
  • 1 tablespoon water

    Grease four deep 1¼ cup (310ml) microwave-proof dishes.

    Make mixed berry sauce. Bring berries, sugar and a tablespoon of water to the boil in small saucepan. Boil for 1 minute and remove from the heat.

    Sift flour into medium bowl. Add sugar, milk, rind and butter; whisk until batter is smooth.

    Divide berry sauce among dishes then top with batter; dust with sifted icing sugar. Pour the boiling water over puddings. Microwave, uncovered, on MEDIUM (55%) about 10 minutes.
