Lemon and mixed berry self-saucing pudding
- 3/4 cup (110g) self-raising flour
- 1/2 cup (110g) caster sugar
- 1/2 cup (125ml) skim milk
- 1 tablespoon finely grated lemon rind
- 30 gram unsalted butter, melted
- 1/3 cup (55g) icing sugar
- 2/3 cup (160ml) boiling water
- 1 cup (150g) frozen mixed berries
- 1 tablespoon caster sugar
- 1 tablespoon water
Method
Lemon and mixed berry self-saucing pudding
- 1Grease four deep 1¼ cup (310ml) microwave-proof dishes.
- 2Make mixed berry sauce. Bring berries, sugar and a tablespoon of water to the boil in small saucepan. Boil for 1 minute and remove from the heat.
- 3Sift flour into medium bowl. Add sugar, milk, rind and butter; whisk until batter is smooth.
- 4Divide berry sauce among dishes then top with batter; dust with sifted icing sugar. Pour the boiling water over puddings. Microwave, uncovered, on MEDIUM (55%) about 10 minutes.
