A healthy meal has never been easier than with this effortless soup. Bacon adds a crisp, salty flavour while carrots, celery and lentils pack this meal with nutrition.
1.Heat oil in large saucepan; cook the onion, bacon, celery, carrots and garlic over high heat until softened.
2.Add the lentils, then stock; bring to the boil. Reduce heat, simmer, uncovered for about 15 minutes or until vegetables and lentil are tender. Stir in chives; season to taste with salt and freshly ground pepper.
