Ingredients

  • 1/3 cup (75 grams) firmly packed light brown sugar
  • 90 gram butter, coarsely chopped
  • 1 1/4 cup (185 grams) plain flour
  • 1 egg yolk
Fruity choc topping
  • 2 eggs
  • 1 cup (220 grams) firmly packed light brown sugar
  • 1/3 cup (50 grams) self-raising flour
  • 1 cup (190 grams) milk choc chips
  • 1 cup (90 grams) rolled oats
  • 1/2 cup (40 grams) shredded coconut
  • 1/3 cup (45 grams) coarsely chopped, unsalted, roasted pistachios
  • 1/2 cup (80 grams) finely chopped dried mixed berries
  • 1/2 cup (30 grams) finely chopped dried apple

    Preheat oven to 180°C. Grease a 20cm x 30cm rectangular pan; line base and long sides with baking paper, extending paper 5cm over sides.

    In a medium saucepan, stir sugar and butter over low heat until smooth. Remove from heat; stir in sifted flour, then egg yolk. Press mixture firmly over base of pan; bake about 10 minutes or until browned lightly. Cool.

    Meanwhile, make fruity choc topping.

    Spread topping over base; bake about 25 minutes or until browned lightly. Cool in pan.

    In a small bowl, beat eggs and sugar with electric mixer until thick and pale; transfer to large bowl, fold in sifted flour then remaining ingredients.
