- 3 medium bananas
- 1/4 cup apricot jam
- 1/3 cup toasted shredded coconut
- 1/2 cup creamy plain yoghurt
- 1 1/2 teaspoon honey
- 1 tablespoon passionfruit pulp
Method
Frozen coconut bananas with passionfruit dip
- 1Peel the bananas and cut each one in half crossways. Insert a paddle pop/wooden craft stick into each banana piece. Heat jam until warm then push through a sieve to remove any lumps. Brush each banana piece liberally with jam then roll in coconut to coat evenly.
- 2Place banana pieces on baking paper lined tray, cover loosely with plastic wrap and place in freezer for several hours or until frozen.
- 3Meanwhile make dip by combining yoghurt, honey and passionfruit in small bowl, cover and refrigerate until required. Serve frozen bananas with passionfruit dip.
Notes
