These crunchy little deep-fried whitebait are a real treat, especially dunked in delicious cucumber garlic dip. They make a great starter, or a great platter for sharing with friends.
1.To make cucumber garlic dip; heat ghee in small saucepan; cook ground spices, stirring, until fragrant, cool. Combine yoghurt, cucumber, garlic and juice in small bowl for dip; stir in spice mixture.
2.Combine flour and fresh coriander in large bowl; add whitebait, in batches, toss until coated.
3.Heat oil in medium saucepan; deep-fry whitebait, in batches, until browned and cooked through. Drain on absorbent paper.
