Ingredients

Cranberry & apple fruit mince
  • 2 2/3 cup (325g) dried cranberries
  • 2 1/2 cup (200g) finely chopped dried apples
  • 2 cup (320g) finely chopped raisins
  • 1 cup (250g) finely chopped dried cherries
  • 3/4 cup (150g) finely chopped dried figs
  • 1/2 cup (85g) mixed peel
  • 1/2 cup (115g) glacé ginger, finely chopped
  • 3 (450g) apples, peeled, coarsely grated
  • 1 1/2 cup (330g) firmly packed brown sugar
  • 1/2 cup (160g) raspberry jam
  • 1 tablespoon finely grated orange rind
  • 1/4 cup (60ml) orange juice
  • 2 teaspoon mixed spice
  • 1/2 teaspoon ground clove
  • 1 cinnamon stick, halved
  • 1 1/3 cup (330ml) grand marnier

Method

Cranberry & apple fruit mince
  • 1
    Mix ingredients in large bowl until combined.
  • 2
    Cover bowl with plastic wrap. Store mixture in a cool dry place for a month before using. Stir mixture every two or three days.

Notes

If you can't find dried cherries, use the equivalent amount of extra dried cranberries instead.
