Cauliflower 'rice' pilaf
Cauliflower rice gets some added flavour from cumin and fresh coriander in this low-carb side dish

- 1 coarsely chopped medium (1kg) cauliflower
- 2 tablespoons olives oil
- 1 teaspoon cumin seeds
- ¼ cup coarsely chopped fresh coriander
Method
- 1Process 1 coarsely chopped medium (1kg) cauliflower, in batches, until finely chopped.
- 2Heat 2 tablespoons olive oil in a large heavy-based frying pan over high heat. Add 1 teaspoon cumin seeds and cauliflower to frying pan; cook, stirring occasionally, for 12 minutes or until cauliflower is just tender. Stir in ¼ cup coarsely chopped fresh coriander.
