Rice can often leave dishes feeling heavy, for a lighter side dish you can substitute a vegetable where a starch would usually be. It’s a great way to squeeze more servings of vegetables into your day.
Cauliflower rice gets some added flavour from cumin and fresh coriander in this low-carb side dish.
1.Process 1 coarsely chopped medium (1kg) cauliflower, in batches, until finely chopped.
2.Heat 2 tablespoons olive oil in a large heavy-based frying pan over high heat. Add 1 teaspoon cumin seeds and cauliflower to frying pan; cook, stirring occasionally, for 12 minutes or until cauliflower is just tender. Stir in ¼ cup coarsely chopped fresh coriander.
