Bbq lobster with chilli butter

Splash out for a summer party or celebration and serve up these delicious barbecued lobster tails with chilli butter.

Bbq lobster with chilli butter
  • 250 gram butter, coarsely chopped
  • 2 long red chillies, finely chopped
  • 2 coriander roots, finely chopped
  • juice of 2 limes
  • 2 lobsters, halved lengthways
  • 1/2 cup coriander leaves

    In a small saucepan, combine butter, chilli, coriander root and lime juice. Place on heated barbecue until butter melts and flavours amalgamate.

    Sear lobster, cut side down, on the grill plate of the BBQ. Turn and brush with the butter. Continue cooking a further 8 minutes, basting often, until lobster is cooked.
