1.Preheat oven to 200°C/400°F. Oil oven trays; line with baking paper.
2.Cook bacon in small frying pan over medium-high heat until browned and crisp; drain on absorbent paper. Cool.
3.Meanwhile, beat butter, egg yolk, cheese and sifted flour in small bowl with electric mixer until mixture comes together. Knead dough on floured surface until smooth. Cover; refrigerate 30 minutes.
4.Roll dough on floured surface until 3mm (¹/8 inch) thick. Cut into 40 x 4cm (1½ inch) rounds, place 3cm (1¼ inches) apart on oven trays; sprinkle with combined extra cheese and bacon.
5.Bake biscuits about 12 minutes or until browned lightly; cool on trays.
Store in an airtight container for up to 3 days.
