Armenian nutmeg cake
- 1 cup self-raising flour
- 1 cup plain flour
- 1 teaspoon ground nutmeg
- 125 gram butter
- 1 1/2 cup brown sugar
- 1 teaspoon bicarbonate of soda (baking soda)
- 3/4 cup milk
- 1 egg
- 1/2 cup chopped walnuts or pecans
Method
Armenian nutmeg cake
- 1Grease 20cm x 30cm lamington pan.
- 2Sift flours and nutmeg into large bowl; rub in butter, mix in sugar (or process until crumbly). Press 1 ½ cups of this mixture into prepared pan.
- 3Stir combined soda and milk into remaining dry ingredients with egg and nuts, mix well; pour into prepared pan.
- 4Bake in moderate oven about 35 minutes. Stand 5 minutes before turning onto wire rack to cool.
Notes
Armenian cooking is noted for its use of spices. In this recipe, nutmeg adds fragrance and taste to a not-too-sweet cake that cooks in two layers. Recipe can be made 2 days ahead; store in airtight container. Suitable to freeze, not suitable to microwave.
