Method

Heat oil in a rectangular slow cooker on HIGH.

Finely chop onion; cook for 5 minutes or until softened. Add half the beef, season; cook, uncovered, stirring, for 10 minutes or until well browned. Transfer to a bowl; repeat with the remaining beef. Return all beef mince to slow cooker.

Adjust setting to LOW. Add pasta sauce and vegetables to slow cooker; stir to combine. Cook, covered, for 5 hours or until sauce is reduced.

Spoon mashed potato over beef mixture.

Cover slow cooker insert with a clean tea towel, then replace cooker lid; cook, covered, for a further 1 hour 15 minutes.

Stand for 10 minutes. Season; serve.
