Smoked salmon pasta with crispy capers

Searching for a quick, versatile dinner that’s full of flavour? Try this mouth-watering tomato and smoked salmon pasta. It’s adorned with crispy capers and finished with freshly ground pepper.

If you’re a salmon lover, then you must try this soft teriyaki salmon for dinner tomorrow night!

Heat oil in a large non-stick frying pan over high heat. Add the capers and cook for 2-3 minutes, stirring occasionally until crisp. Remove with a slotted spoon and set aside.

Reduce the heat to medium. Add the tomatoes and garlic, season with salt and pepper and cook, stirring occasionally for 6 minutes or until tender and breaking down.

Meanwhile, cook pasta water for 6-8 minutes, or until al dente. Drain, reserving ½ cup of cooking water.

Add pasta and cooking water to the pan. Gently stir for 3 minutes. Add spinach, flaked salmon and half the capers, gently toss to coat.

5.

Serve pasta topped with extra capers to serve. Season with freshly ground pepper.

This tasty pasta would work well with leftover barbecue chicken in place of the salmon. Add a handful of chopped parsley, a squeeze of lemon and serve with grated parmesan.
