Spicy roasted pumpkin couscous

This quick and tasty vegetarian couscous dish is packed full of flavour and the goodness of roasted pumpkin and Middle Eastern spices.

1.Preheat oven to 220°C (200°C fan-forced).
2.Heat oil in medium flameproof baking dish; cook garlic, onion and pumpkin, stirring, until vegetables are browned lightly. Add spices; cook, stirring, about 2 minutes or until fragrant.
3.Roast, uncovered, about 15 minutes or until pumpkin is just tender.
4.Meanwhile, combine couscous with the water and butter in large heatproof bowl; cover, stand about 5 minutes or until water is absorbed, fluffing with fork occasionally to separate the grains.
5.Add pumpkin mixture to couscous; stir in parsley.
