Spicy chicken on couscous with spinach



1.Combine oil, garlic, spices and chilli in small bowl.
2.Split each chicken fillet in half horizontally to form 8 thin pieces. Place chicken in large bowl with spice mixture, toss to coat chicken in spice mixture.
3.Cook chicken on heated oiled grill plate or (or grill or barbecue) until browned and cooked. Cover to keep warm.
4.Meanwhile, make couscous with spinach. Bring stock to the boil in small saucepan. Combine couscous and hot stock in large heatproof bowl, cover; stand about 5 minutes until liquid is absorbed, fluffing with fork occasionally. Heat butter in large frying pan, add couscous, cook, stirring, until the couscous is separated and fluffy. Add the rind and spinach, toss gently, season to taste.
5.Serve chicken with couscous and lemon wedges.

The chicken can be marinated a day ahead. Recipe best made close to serving.
