Spanish tortilla



1.Heat oil in medium frying pan, cook onion, stirring, until it softens.
2.Combine onion, potato, egg and cheeses in large bowl.
3.Pour potato mixture into heated oiled medium frying pan, cook, covered, over low heat 10 minutes or until egg sets.
4.Carefully invert tortilla onto plate and slide back into frying pan, cook further 5 minutes or until cooked through.
5.Remove from heat, stand 10 minutes before removing from pan.

Canned tiny new potatoes are a nifty shortcut in this recipe. Tortilla can be eaten hot or cold and makes great picnic fare.
