Method

1.Heat oil in large saucepan; cook onion and garlic, stirring, about 5 minutes or until onion softens. Add paste; cook, stirring, 2 minutes. Add tomato and the water; bring to a boil then reduce heat. Simmer, uncovered, about 5 minutes or until sauce thickens slightly.
2.Blend or process mixture until smooth. Stir in parsley.

Semi-dried tomatoes bought by weight from a delicatessen are best for this recipe. If you use those sold packaged in oil, drain well and pat with absorbent paper before use. Also goes well with grilled sirloin steaks; grilled pork cutlets; pan-fried chicken breasts.
