Method

1.Combine ricotta, gorgonzola and egg in medium bowl. Whisk in flour; stand 1 hour, turning occasionally, until fritters are browned lightly all over and cooked through. (Do not have oil too hot or fritters will over-brown before cooking through.)
2.Heat oil in a large saucepan; deep-fry heaped teaspoons of cheese mixture.
3.Place parmesan in medium bowl; toss hot fritters, in batches, to coat as they cool.

Gorgonzola is a creamy, blue cheese from Italy; if unavailable, use blue Castello.
