Method

1.Preheat grill. Grill 6 slices prosciutto until crisp; chop coarsely.
2.Combine cider vinegar, olive oil, wholegrain mustard and honey in screw-top jar. Shake well and season to taste.
3.Serve baby rocket topped with figs, goat’s cheese and prosciutto; drizzle with dressing.

Freeze cheese for 10 minutes to make crumbling easier.
