1.Preheat oven to 150°C (130°C fan forced).
2.Cut tomatoes in half, combine with oil and thyme. Spread salt on oven tray, top with tomato, cut-side up. Drizzle tomato with any remaining oil mixture. Roast, uncovered, about 30 minutes or until soft and slightly shrivelled.
3.To make dressing, whisk mustard and vinegar in medium bowl until combined. Slowly whisk in oil, in a thin, steady stream, until combined. Stir in cream, season to taste.
4.Top lettuce with tomato and avocado, drizzle with dressing.
