Apple and cinnamon scones

With chunks of apple and a sprinkle of cinnamon, these quick and easy scones are the perfect way to jazz up your morning tea. Best served warm with jam and cream.

Ingredients

Method

1.Preheat oven to 220°C. Lightly grease and line an oven tray with baking paper.
2.Sift flour and ground cinnamon into a medium bowl. Stir in brown sugar. Using fingertips rub butter into flour mixture. Stir apple through, reserving 2 tablespoons.
3.Make a well in the centre of the flour mixture. Pour in milk and mix to a soft dough. Turn onto a floured surface and gently knead into a 13cm square, about 4cm high. Using a floured knife, cut into 9 squares.
4.Transfer to oven tray. Brush with a little melted butter, sprinkle with reserved apple and cinnamon sugar. Bake for 12-15 minutes, until scones are well-risen and golden. Transfer to wire rack to cool slightly. Serve warm with jam and yoghurt.

Be careful not to overwork the dough – use gentle, soft hands to ensure a light result. These are best eaten on the day they are made.
