Method

Vietnamese beef roast with cucumber salad

1.In a large bowl, place beef and combined remaining ingredients in a large bowl; turn beef to coat in marinade. Cover; refrigerate 3 hours or overnight.
2.Preheat oven to 200°C.
3.Place beef on a wire rack in a large baking dish; roast, uncovered, 1¼ hours or until cooked as desired. Cover beef; rest 10 minutes.
4.Meanwhile, make cucumber salad.
5.Slice beef, serve with salad.

6.In a medium bowl, stir sauce, chilli, juice and sugar until sugar dissolves. Add tomato, cucumber and coriander; toss gently to combine. Season to taste.
