1.Combine the apricots and water in a small bowl; cover and stand overnight.
2.Combine the undrained apricots with the remaining ingredients in a medium pan; bring to the boil, then simmer, uncovered, for about 40 minutes or until the mixture is thickened, stirring occasionally.
3.Pour into sterilised jars; seal while hot. Cool to room temperature then refrigerate.
