1.Place oil, rind, juice and oregano in screw-top jar, shake well.
2.Thread lamb, capsicum and onion, alternately, on skewers. Place on baking tray, drizzle with half the dressing.
3.Cook souvlakia on heated oiled grill plate until cooked as desired.
4.Meanwhile, combine tomato, nuts and mint with remaining dressing in small bowl.
5.Serve souvlakia with salad and, if desired, pitta bread.
