Italian sausage bruschetta



1.Squeeze sausage mince from sausage casings. Using hands, break sausage mince into bite size pieces. Discard casings.
2.In a large frying pan, heat half the oil over medium. Cook onion, garlic, chilli and sausage pieces 5 minutes or until browned all over.
3.Add mushroom; cook, stirring until just starting to soften. Stir in wine, tomatoes and beans. Bring to boil, simmer, covered, 10 minutes or until thickened slightly. Stir through basil. Season with salt and pepper.
4.Meanwhile, mix together egg and parmesan; season with salt and pepper. Heat a large frying pan with remaining oil, over a medium heat. Soak bread in egg mixture, one at a time for 30 seconds. Cook in batches, 2 minutes on each side or until golden brown.
5.To serve, arrange bread in large shallow bowls. Top with sausage mixture and basil.
