1.Heat oil in large saucepan and stir onion, celery, garlic and paprika over heat until onion is soft.
2.Add potato, parsnip, carrot, stock and water; bring to a boil. Reduce heat and simmer with lid on for about 15 minutes or until vegetables are tender.
3.Stir in couscous and parsley. Cook with lid off for 2 minutes or until couscous is tender.
