Method

1.Finely chop 5 slices of the prosciutto.
2.Heat butter in a medium saucepan over medium heat and add chopped prosciutto. Stir over heat until crisp. Add onion and corn; continue stirring until just tender. Add flour and continue to stir another 1 minute.
3.Gradually stir in milk and stock. Stir until mixture boils and thickens slightly. Simmer, covered, about 20 minutes or until corn is tender. Season to taste.
4.Meanwhile, preheat grill on high. Place remaining prosciutto on a foil-lined oven tray. Cook under grill about 1 minute or until crisp. Cool slightly and break into pieces.
5.Serve chowder topped with crispy prosciutto pieces and micro herbs.

You will need about 6 fresh cobs of corn for this recipe.
