1.Combine ingredients for marinade in large bowl, add beef, mix well. Cover, refrigerate 3 hours or overnight.
2.Heat half of the ghee in large saucepan, cook beef mixture, in batches, stirring, until browned.
3.Heat remaining ghee in same pan, cook capsicum and onion, stirring, until onion is soft.
4.Return beef to pan, add stock, coconut milk, cinnamon and curry leaves. Simmer, covered, 1 hour, stirring occasionally.
5.Remove cover, simmer about 30 minutes or until beef is tender. Discard cinnamon stick, stir in coriander.
