Method

1.Combine chicken and 3 cups coconut milk in pan. Bring to the boil, then simmer with lid on for 20 minutes. Drain chicken; discard coconut milk
2.Meanwhile, blend chilli, peanuts, peppercorns, lemongrass, onion, garlic, sugar and paste until well combined
3.Heat oil in pan, cook peanut mixture, stirring, for about 2 minutes or until fragrant. Add chicken and remaining coconut milk and stir until hot
