Banana jam

1.Combine banana, juice, cinnamon and the water in large saucepan; split vanilla bean in half lengthways, scrape seeds into pan, discard pod. Bring to the boil; boil, covered, about 10 minutes or until banana is soft.
2.Add sugar; stir over high heat, without boiling, until sugar dissolves. Bring to the boil; boil, uncovered, about 20 minutes or until jam gels when tested.
3.Pour hot jam into hot sterilised jars; seal immediately. Label and date jars when cold.
