Tortilla de patatas (potato omelette)

This light and tasty Spanish pan tortilla is wonderfully fluffy and packed full of tender potato pieces. Serve it with a fresh side salad for a no-fuss family dinner.

Method

1.Preheat oven to 180°C.
2.Heat oil in 22cm ovenproof frying pan; cook potato and onion, covered, stirring occasionally, until potato is tender.
3.Add eggs to pan. Cook, uncovered, over low heat, about 5 minutes or until egg is just set.
4.Place pan in oven; cook, uncovered, about 10 minutes or until browned lightly. Carefully turn tortilla onto large plate. Cut into wedges; serve with a side salad, if you like.

You can try adding other ingredients you desire like a pinch of dried chilli flakes, frozen peas, sun-dried tomatoes or char-grilled capsicum.
