1.Spread 4 slices of bread with cranberry sauce. Top evenly with chicken, spinach and mozzarella. Top each with a second slice of bread.
2.Preheat a sandwich press. Lightly spray or brush each side of bread with olive oil. Cook for 2-3 minutes or until golden and cheese has melted. Serve with a green salad.
To take this sandwich to work, make to the end of step 1 at home and wrap in plastic wrap. Chill until ready to toast. Cranberries, unlike most other common berries, are unpalatably tart in their natural state and are most often sweetened and served either as juice, sauce or dried.
