Method

1.In a large saucepan, heat ghee; cook onion, stirring, until browned. Add ginger, garlic, chilli and spices; cook, stirring, until fragrant. Add lamb; cook, stirring, until well browned. Add stock; bring to a boil, simmer, covered, 20 minutes.
2.Remove cover; cook, stirring occasionally, until all liquid has evaporated. Just before serving, add tomato and mint; stir until heated through.
