Balsamic dressing

Method

1.In a large saucepan of boiling water, cook rice, uncovered, about 30 minutes or until tender; drain. Rinse under cold water; drain.
2.Meanwhile, boil, steam or microwave kumara until tender; drain.
3.Place ingredients for balsamic dressing in screw-top jar; shake well.
4.In a large bowl, place rice and kumara with remaining ingredients and dressing; toss gently to combine.
