Satay pork cutlets

Our sticky peanut satay pork recipe only uses a handful of ingredients to create a delicious weeknight meal.

Chicken thighs would be delicious in place of the pork in this recipe.

Method

1.If you have time, remove pork from refrigerator 30 minutes before cooking.
2.Rub 1½ tablespoon kecap manis over the pork cutlets. Set aside to marinate for 10 minutes.
3.Combine the peanut butter, water, sambal oelek and remaining kecap manis in a small saucepan over low heat. Stir for 4 minutes, or until thickened and warmed through. Set aside.
4.Heat oil in a large non-stick frying pan over medium heat. Cook pork for 3-4 minutes each side, or until caramelised and cooked through. Set aside, covered loosely with foil to rest for 5 minutes.
5.Serve pork with pan juices, steamed rice, Asian greens and the satay sauce.
