Method

1.Line bamboo steamer with a plate large enough to just fit steamer. Place stems of gai lan in single layer on plate. Steam, covered tightly, over wok or pan of boiling water about 3 minutes.
2.Remove lid from steamer, place gai lan leaves then fish on top of stems. Spread with combined sauce and the water, sprinkle with ginger; replace lid; steam about 5 minutes or until fish is just cooked through.
3.Meanwhile, place oil and chilli in small microwave-safe jug; cook on HIGH (100%) for 30 seconds until hot.
4.Serve fish on gai lan; drizzle with hot oil mixture. Serve with steamed rice or noodles, if desired.
