Method

1.Cook noodles in large saucepan of boiling water, uncovered, until just tender; drain. Rinse under cold water; drain.
2.Meanwhile, heat half of the oil in wok; stir-fry chicken, in batches, until just cooked through.
3.Heat remaining oil in wok; stir-fry carrot, mushroom and ginger until vegetables are just tender.
4.Return chicken to wok with combined stock and sauces; stir-fry until hot. Add noodles, onion, chilli and peas; stir-fry until heated through.
