Lime and black pepper dressing


1.Cook rice in large saucepan of boiling water, uncovered, until just tender; drain. Rinse under cold water; drain.
2.Meanwhile, place ingredients for lime and black pepper dressing in screw-top jar; shake well.
3.Place rice in large bowl with grapes, celery, nuts and half of the dressing; toss gently to combine.
4.Divide watercress among serving plates; top with rice salad then chicken. Drizzle with remaining dressing.
