Roast potatoes

There's nothing more satisfying or delicious than a perfectly roasted potato. The key to achieving that sought after crispy exterior with a fluffy inside lies in making sure the potatoes are really dry before placing them in the oven.

Ingredients

Method

1.Preheat oven to hot. Lightly oil an oven tray.
2.Boil, steam or microwave potatoes for 5 minutes; drain. Pat dry with absorbent paper; cool 10 minutes.
3.Gently rake rounded sides of potatoes with tines of fork; place potatoes in a single layer, cut-side down, on prepared oven tray.
4.Brush with oil; roast, uncovered, in hot oven about 50 minutes or until potatoes are browned and crisp.
