Method

1.Cook pork cutlets on a heated oiled grill plate (or grill pan or barbecue), over medium-high heat, for 3 minutes each side or until cooked as desired.
2.Dry-fry teaspoon fennel seeds and teaspoon coriander seeds in a small frying pan, stirring, over low heat, until toasted and fragrant. Using a mortar and pestle, crush seeds until fine. Add sea salt flakes, crush lightly to combine. Serve pork sprinkled with fennel salt.
