How to store mushrooms

Mushrooms are best stored in the fridge. Place mushrooms in a paper bag topped with a damp paper towel to prevent the mushrooms drying out. Storing mushrooms in plastic will cause them to sweat and become slimy. If stored correctly fresh mushrooms will keep for up to a week in the fridge.

1.Cook pasta in a large saucepan of boiling salted water until just tender; drain, reserving 1 cup (250ml) of the cooking liquid.
2.Meanwhile, heat oil in a large deep frying pan over high heat; cook mushrooms and shallots, stirring occasionally, for 5 minutes or until mushrooms are lightly golden and shallots are tender. Add garlic; cook, stirring, for about 1 minute or until fragrant. Season to taste.
3.Reduce heat to low; toss warm pasta, almonds and spinach through mushroom mixture. Add enough reserved pasta water to lightly coat the pasta. Serve topped with cheese and parsley.

If you don’t have a large frying pan, cook the mushrooms in batches to prevent them stewing. You can use 800g of your favourite variety of mushrooms; button and cap mushrooms work well.
