Stir fries are a dinner favourite in many households across Australia! This easy-to-prepare hoisin beef stir-fry recipe is a flavourful weeknight dinner made with shittake mushrooms and marinated beef.

Test Kitchen Tip:

This recipe works well with any variety of mushroom: Swiss brown, portobello, enoki and button. Serve with steamed rice or tri-colour quinoa.

DO AHEAD: Beef can be marinated a day ahead; cover and refrigerate. To save time, use 800g purchased beef strips.

1.Combine sesame oil, garlic, ginger, half the rice wine and half the soy sauce in a large bowl. Add beef; toss to coat in marinade. Cover; refrigerate for 3 hours or overnight.
2.Heat a wok or large frying pan over high heat, add half the oil; stir-fry undrained beef mixture, in batches, until beef is browned and just cooked through. Transfer to a bowl.
3.Heat remaining oil in wok; stir-fry mushrooms, choy sum stalks, green onion and the water. Cover; cook for 5 minutes or until vegetables are tender.
4.Return beef to wok with hoisin, choy sum leaves, remaining rice wine and remaining soy sauce; stir-fry until leaves just wilt.
5.Serve beef stir-fry topped with chilli.
