Grilled pancetta omelette

For the easiest brunch, lunch or light dinner, try this tasty omelette topped with grilled pancetta, zucchini and tomato.

Method

1.Preheat grill to medium.
2.In a medium bowl, combine eggs, milk, half the cheese, and onion. Season to taste.
3.Heat oil in a 20cm non-stick frying pan on medium. Pour in omelette mixture. Cook, covered, for 6-8 minutes until set.
4.Top with pancetta, tomato, zucchini and remaining cheese.
5.Place pan under the grill for 1-2 minutes until cheese melts and browns lightly. Cut omelette into wedges and serve with mixed salad leaves.
