This easy chicken stir fry is made with spicy chilli, tangy lime and slightly salty-yet-sweet hoisin sauce for that ideal flavour combination that is so well known in Thai flavours.
1.Heat oil in a large wok over medium high heat. Add onion, garlic and chilli and cook 1-2 minutes. Add chicken and stir fry 4-5 minutes, until beginning to brown.
2.Add capsicum and broccolini and stir fry a further 1-2 minutes until capsicum and broccolini are just tender.
3.Stir in lime juice, hoisin sauce and palm sugar; stir fry until well combined and chicken is cooked through.
4.Toss through roasted peanuts and basil leaves and serve with steamed rice or noodles.
