Method

1.In a large saucepan, heat half of the oil on medium heat. Cook chicken, in batches, for about 2-4 minutes or until browned, remove from pan.
2.In the same pan, heat the remaining oil and cook onion, garlic and paste, stirring, for about 2-3 minutes or until onion is soft. Return chicken to the pan with coconut milk, coriander and yoghurt. Reduce heat to low and simmer, covered, for about 20 minutes, or until chicken is tender.
3.Garnish with fresh coriander and serve.

Suitable to freeze.
