Chicken and mushroom is a classic flavour combination – but have you ever tried it in a lasagne? Well, now you can with our gorgeous recipe for a cheesy mushroom and chicken lasagne.
This chicken lasagne is also a great make-ahead option. You can prepare everything the day before, then simply pop it into the oven to bake the following night.

Preheat the oven to 200°C (180°C fan-forced).
Heat a large frying pan with 3Â tablespoons of olive oil; cook mushrooms over high heat until browned and tender. Remove from pan and set aside.
Heat remaining tablespoon of oil in the same pan; cook onion and garlic, stirring, until onion softens. Add chicken; stir until browned. Add tomato paste; cook, stirring, until combined. Add canned tomatoes, stock and sugar; bring to the boil. Reduce heat; simmer, uncovered, for 10 minutes or until thickened. Stir in the basil, season with salt and freshly ground black pepper.
WHITE SAUCE Melt the butter in a medium saucepan. Add flour; cook, stirring, for 2 minutes or until mixture is bubbling. Remove from heat; gradually stir in the hot milk. Return to heat and cook, stirring constantly, until sauce boils and thickens. Simmer, uncovered, for 3 minutes. Season to taste. Remove from heat; stir in the cheeses.
Line base of an oiled 2-litre (8-cup) square ovenproof dish with a lasagne sheet, trimming to fit; top with a third of the chicken mixture, a third of the mushrooms and a quarter of the white sauce. Repeat layering twice more. Top with the remaining lasagne sheet and remaining white sauce; sprinkle with cheeses.
Place dish on an oven tray and cover dish with greased foil; bake for 25 minutes. Uncover; bake for 30 minutes or until browned and bubbling around the edges.
Stand chicken and mushroom lasagne for 20 minutes before serving to make cutting easier. Serve with extra basil and salad leaves, if you like.

Cooked lasagne can be stored in the fridge for up to 3 days. To store longer, cut into portions, wrap tightly in plastic wrap, place into an airtight container and freeze.
