Chicken and vegetable pilaf

Kids will love this mildly spiced rice dish loaded with vegies and chicken.

Method

1.Trim fat from chicken fillets and cut chicken into 2cm cubes. Sauté chopped chicken in a heated, greased large frypan until browned all over. Remove chicken from frypan and set aside.
2.Heat a little oil in same frypan, add onion and curry powder, stir until onion is softened, then add rice and stir over heat a further minute. Stir in stock cube and 1 litre hot water and bring to the boil. Reduce heat to low, simmer covered for 10 minutes. Stir in chicken and frozen vegetable mix, cook covered over low heat for a further 5-10 minutes, stirring occasionally until chicken and vegetables are tender.
