Baked barramundi with amazing green sauce

Barramundi is a beautiful white fish that is native to the Asia-Pacific ocean region, making is easy for us Aussies to have easy access to a wonderfully fresh piece of seafood.

Here we’ve baked it to make life a little bit easier and served with a fresh green sauce made from herbs, chilli and pistachios.

Amazing green sauce

Method

1.Preheat oven to 220°C/425°F. Line a large roasting pan with baking paper.
2.Place asparagus and beans in pan; top with barramundi, skin-side up. Top barramundi with lemon slices, then drizzle with oil; season.
3.Bake barramundi and vegetables for 8 minutes or until fish is just cooked through and vegetables are tender.
4.Meanwhile, make amazing green sauce. Blend or process all ingredients with ½ cup (125ml) water until smooth; season to taste.
5.Divide fish and vegetables among plates; serve with amazing green sauce.

You can use 4 x 250g (8oz) salmon fillets instead of the barramundi, if you like. You will need to reduce the cooking time accordingly.
